Raw Kale Salad

kale, chopped  super thinly

1 cup pine nuts (no need to toast)

1/2 cup shredded parmesan cheese

1/4 currants (optional)

salt and pepper, to taste

1 lemon, juiced
½ cup olive oil

salt  to taste

Wash and dry the kale. Remove the stems and chop it into strips by rolling the leaves into a ball and making thin slices. Cut it all once again going in the other direction so you end up with a pile of nicely chopped greens. Add dressing, parmesan, currants and salt.. Yumm

Spring! Spring! Spring!

"Rough winds do shake the darling buds of May and summers lease hath all to short a date."

And it is this time of year the farm is buzzing along side the honey bees.  We are busy at work planting and weeding, weeding and planting.
Now the Spring rains have brought us the beautiful radishes and turnips.  I am thankful for these simple things and I hope you are able to sit around your table
this week with your friends and family and acknowledge the greatness of Mother Nature as you enjoy our Spring harvest.
